WRT yodeling: most Southern Tyrolians that I spoke to don't consider themselves as being Italians. German is their main language so my guess is that their yodeling would be "German style" as well.
But I wouldn't know for sure, I've never had the privilege to hear a Southern Tyrolian yodel.
In any case, the Dolomites are very impressive and well worth a travel. They're very photogenic as well. You can point your camera almost anywhere and find beautiful things to shoot. And the people are lovely.
