Well, you learn something new, every day....

It never even occurred to me that anyone would photograph vegetables in a "serious" way.  Mind you, I know there are specialist "food" photographers, so I'm not really sure why I would be surprised. 

They're lovely photos.  Thanks for posting.

I bought the 1998 edition of "The plant kingdoms of Charles Jones" when it was first published, and it remains one of my favourite photo books.
As an "unknown" until fairly recently, he'll have had pretty much zero influence, but you can certainly see the lineage from Jones through Karl Blossfeldt's flowers and on to modern works such as Allan Jenkins veggie still life studies.
Merveille de Bollwiller.
A hardy, vigorous and productive variety with large nuts!

the pairs of dark and light veggies on contrasting backgrounds looked great

Edward Weston famously photographed vegies - and his lavatory pan, apparently, although I have never seen a print of his loo, but he did write to a famous photographer (whose name escapes me; perhaps Stieglitz?) saying that he was photographing his bathroom appliances. And unlike Helmut Newton, that wasn't a euphemism.

Perhaps it was just some artistic way of cutting out the middle-man?
