Great image. It comes at the right time for me. Someone burned chilis in the oven in our building this evening. So much so that the fire brigade had to come as everyone was coughing from all the vapors! Not drying chilis like that (I assume that was the idea) is "chili 101" ...

So, that makes them either Serrano pepper, Peter pepper or Aleppo pepper :)

I was "lucky" enough to experience a "naga" chilli curry when on holiday in Sri Lanka last year. It was hot but within tolerances that allowed the flavour of the other ingredients to be evident. That said, it did stimulate the mucous production. I had watering eyes and a runny nose (yuk, I know  :o ) for a couple of hours afterwards.

I grew a load of bhut jolokias (a variant of the naga- ghost) last year. With the right conditions they get over a million scovilles, although probably not in my north facing yard, sadly. I froze them and cook with them regularly (still have a freezer full) , althoughthe air is like someone has pepper sprayed the house for about 5 hours after cooking, so I'm banned from doing it when Mrs t is in. They are so fruity and tasty that the burn is worth the pain :-)

Hm. I need to grow some chili again next year. We will have two huge balconies ... and a two year old. But then I have a few months to think about safety measures ;)
